A glass of wine contains the very essence of Hungarian cultural history. Hungary had been a great power in wine production for centuries. It possessed every required element for being that: increasing expertise, fruitful tradition, suitable soil, excellent climate, adaptable species and national romanticism - all indispensable for viniculture. Our ancestors filled the Carpathian Basin with both visible and underground evidence of that hegemony. AH castles and monasteries of the country had cellars suitable for storing wine. Vaulted mediaeval cellars - made of stone - were found in Esztergom. In Szekesfehervar each house of the old town has a cellar. After the Mongol invasion Germans had been settled inside the town walls of Vac. According to a Turkish inventory of 1570 all but one house of the German district of Vac had wine cellars. Looking down from the height of Pannonhalma monastery we see the gently sloping landscape. There are no peaks reaching to the sky or wild waterfalls running down the rocks nor giant pine trees but there are chains of mild curves everywhere. Where the slopes are embellished with vineyards, there the press-houses and wine cellars fit to the landscape; these beautiful, man-made creations do not want to be striking at all. In Northern Hungary wine cellars are located in hills close to villages or in the shadowy valleys. However wine cellars, press-houses, wine villages presented in this book are not merely outdoor museums but also wonderful and alive realities of the renewed and renewing strength of the Hungarian wine economy.

The matyó people are one of the ethnographical groups that emerged relatively late. It was only in the 18th-19th centuries that the folk culture of Mezőkövesd and the villages of Tard and Szentistván traditionally regarded as belonging to it became distinct from their environment, largely due to their Roman Catholic population.
